I'm completely new to anything game dev. I just think it would be nice to make something in the same spirit as va11halla, but I have no idea which engine to start with. Should I go with unity or gamemaker (this has so many versions, why?!)

I believe it was built with gamemaker, the original beta was renpy iirc The devs of va-11 themselves moved to unity for their next games so take that as you will

it uses a Suzuki M13A (1.328cc) with no vvt, 83.8hp at 6k rpm and 110Nm of torque at 4100rpm

If you just want to make visual novels, then I will 100% suggest RenPy. It's got the best and easiest system to get text and character sprites on screen.
Unity is the industry-standard, but the learning curve is imo obscene. Can't speak about Gamemaker as I haven't tried it, but lots of really good 2D indie games are built with it.

I highly recommend Game maker, only problem is that is not free, and that went worse with Game Maker 2 (if you can get Game Maker 1.6 free like it once was on Steam there are no limitations at all, just that you can only export games to Windows)

Game maker 2 free introduces lots of limitations. You can make small games or trick putting all of the code in one object and swap between instances with a Switch. The same goes for sprites. Sometimes Humble Bundle gives game maker bundles for $10, its really worth

It was started with RenPy. This is very easy to use but it requires a bit more time to write.
