I know one game, and it's WorldBox - God Simulator, what I do most of the time is make a world then spawn 10 human beings, and watch the human civilization progress, while listening to some music.

The Auto-Clicker genre is the first that comes to mind. Some input here and there, but the games are largely autonomous. Anything with the term "idle" in the description should do the trick, really.
Playing something like SimCity on a slow speed would also be pretty slow-going, just letting things progress as you see fit. There are bound to be a few simulator/strategy games with such options, so long as you keep the difficulty to a minimum.

Idle games or management games. While Factorio and Minecraft style games usually require attention, if you play at slow pace you can basically stand still while stuff is happening. Minecraft with its farms you don't really need to go really far if you learn about spawn mechanics, skyblock definetly enchances that kind of gameplay, and if you combine it with Python's automation you can do some really neat stuff.
