I can vouch for Hyper Light Drifter, Momodora, River City Girls, and I'll also add Iconoclasts into this list. Excellent pixel art in all of those and excellent games in general.
If you want a different genre, try Yes, Your Grace, which is kind of like a kingdom management narrative game.
There's also Children of Morta. The gameplay and story are kinda disappointing, but the pixel art there is top notch.

You play Crimzon Clover. It's hard to tell if the spites are hi-res or if their digitized 3D models. With the bullet patterns it creates this sort dithered/shimmering pixels aesthetic. It is also really good and accessible Bullet hell game
