I'm looking for some games with really fun side quests/content. For reference of what I mean, the games with my favorite side content are the Yakuza series and Gravity Rush 2. Also because I know somebody will probably mention them, I'm not all that interested in any of the CDPR games. I'm sure they've got great side content, but I've never been able to get into them.

Well, after CDPR the next obvious pick would be Bethesda, both TES and Fallout are the series known for their ability to pull players really far away from the main plot for a looong time.
I've also heard something to that extent about Xenoblade Chronicles series and Dragon Quest XI. Also maybe Tales of (spefically Symphonia, Vesperia, Berseria).

Dark Souls and Bloodborne. There are areas, bosses, and quests that take quite a bit if effort to find. So chances are you may or may not find them while trying to do the main quest.
There's also Final Fantasy XII. You'll get a lot more out of the worldbuilding and/or battles in the side content. Mainly from the hunting quests, one of which includes a climactic encounter with a certain FF character.

NieR (both the original and Automata) has some very fun and/or interesting side quests. Some of them are just fetch quests, but some are genuinely things I sit and think and eventually cry about.
