I started wanting to play more jrpgs again but something about the style of newer game seem all same-y. Is there an interesting, weird gem I'm missing? I grew up with 90s jrpgs that all seemed to vary greatly

Let me know if you find turn based ones again. Hard to find a fun JRPG that's turn-based that wasn't made with RPG Maker.

Bravely Default 2 and Dragon Quest XI are definitely "classic" JRPGs in every sense of the word, but they are so, so good.
For something slightly more interesting, although slightly less recent, I'm a big fan of both Etrian Odyssey and 7th Dragon series.

Oh yeah, also Shin Megami Tensei III Nocturne remaster is pretty recent (though I've heard that the original's better) and SMT5 is on the horizon.

If you haven't played Yakuza: Like a Dragon yet, it's a pretty different JRPG from most things out there.

It's an actual full-fledged JRPG. Distinct battles, a linear story, interesting characters that join your party, a ragtag gang killing gods. Will definitely scratch the JRPG itch.

JRPG is a pretty ambitious genre to tackle, so the good ones tend to be from established studios. When indies try them they usually get mixed results.
With that in mind, I've heard good things about: - Ikenfell - Celestian Tales: Old North - Trapper Knight, Sharpshooter Princess - Legrand Legacy - Edge of Eternity (still in Early Access, but looks promising)
(I'm uhh assuming you meant JRPG as a distinct genre. Disregard this if you actually want something made in Japan)
