I want to get into Touhou because cute anime girls but how? where should I start. Do I start with the games or like manga or an anime?

2hu officially is only the numbered games, mostly bullet hell
zun, the guy behind it, doesn't mind people using his characters and world and such for fan projects which works be any anime or manga or often games you'd see

If you want to get into the bullet hell games I think there's one on steam or you can try getting your hands on a copy another way, cough MoriyaShrine cough
I was recommended to start with touhou 6 embodiment of Scarlett devil and enjoyed it but it's useful to know later games show your hurtbox when you press shift
It's a little bead on the center of your character not your full character for note

Lots of ways! If you want the "official" way, some of the newer games are on Steam. You can get a patch for whatever language you speak at thpatch.net. If you're not into shoot-em-up, the fighting games are also really good.
Or you can play the fangames! If you like metroidvania, Touhou Luna Nights seems great.
The wiki (en.touhouwiki.net) has info on everything. The characters, the settings, all the games, comics, music albums, etc, both official and unofficial.

For the official games, don't worry about playing in order. Just play whichever has the character/music/setting you like the most! Just know that the older you go, the more dated it is. Th13 is more-or-less the start of the current modern era, but th6-10 have bigger fanbase.
There are no official anime, but there are official manga! There are multiple series with different stand-alone stories each. The wiki has info about them and where you can read them.

If you only want to get into Touhou because "cute anime girls" just read some doujinshi and call it a day. But if you *do* want to actually get into the games, I'd recommend starting with 6 (with hitbox patch) or 7, they're older and kinda rough around the edges, but they're also the most simple and straightforward mechanics-wise. Also, controversial opinion, but those two have (some of) the best girls.

Touhou luna night is awesome experience, and is one of the only exception of the bullet hell franchise
Does "Gensokyo night festival" count as a touhou game/fangame?

I'd recommend the official manga Silent Sinner in Blue, it's a little hard to follow but it shows a lot of the tone and core characters well and has a lot of really nice moments/character art

Koumajou Densetsu (also known as Touhouvania) is my fav, and it has a good official English patch. I also really like Touhou Pocket Wars and the Pokemon-hack Touhou Puppet Play.

Touhou 10 felt easier for me as you use the power you collect for bombs thus you basically always have a bomb when you need it, just don't spam it all at once and end up with no power.

If we're going by the easiest, Th13 is undisputedly the easiest if we just look at bullet pattern and density. (at least I think so? I haven't tried 16-17 tho)
Th10 has the most forgiving bomb system, but the patterns get tricky. Th8, if you can get the hang of its system, is the easiest to get a Good Ending + Extra Stage.
Th8 and Th10 also have builds/glitch that will obliterate the enemies in a way that's not intentional by the dev.

Haven't played the games after LoLK. PoFV is weird, so not included.
In other news, is it easier for you g/u/rls if we use numbers or the acronyms? I can do both, but honestly I prefer acronyms...

Love the numbers cause whole ones so far have been only shoot em ups while decimal ones were fighters or other genres. So I can even know what type of game we're talking about with numbers, which is neat.

Once you get somewhat familiar with the characters, if you want to know more about them definitely check out the official print works (Bohemian Archive in Japanese Red, Perfect Momento in Strict Sense, etc.)

Most games require 1cc on Normal or above to get the true ending, except for Th8 (which have its own system), Th11 (which can be reached on Easy), and maybe others.
