The secret is how dry it is. It's so devoid of humidity or water that it's next to impossible for bacteria to grow on it.
Now, it wasn't exactly good or nutritious, but it did serve as food for hungry sailors.
One of the best survival foods is actually beans, though, because of the same reason- they almost never go bad. It could take several years as long as you keep them dry.
