If you have pasta you should boil some pasta, mix the egg with the pasta and then cook it in frying pan. It's really tasty. You can do it with rice too! There's also a thing like that you can do with bread slices, but that needs a few more ingredients I think, and I don't remember them right now.

I mean, if you don't like grease, boiled egg exists. I also second >>749164 's suggestion of mixing it (or at least boiling it) with pasta. Pickled egg is also great, but it takes a long time to make.
If you don't mind a bit more butter, but don't want basic omelette, you can mix it with flour and milk to make basic pancakes.
