I worked on a farm for a bit, doesn't suck out your soul if you've got a good harvest crew but you gotta be strong as all hell. Being a brickie/builder can be good too, but again, all depends on having a good crew to work with.
The railroad used to be really good apparently, but in the US and the UK they stripped all the joy out of it & now everything has managers breathing down your neck. Maybe there are still some yards that have decent companies running them, but I doubt it.

Groundskeeping is lovely, you get to live and care for a bit of land without the pressure of time constraints that harvest season imposes. Generally that requires some small amount of mechanics to keep stuff like motors and electrical equipment running, but it's generally pretty relaxed.

Ecology & wildlife protection is also another good route, although it depends what country you're in and how good the funding for that is. I recommend doing voluntary firewatch if thats a thing where you are, you basically sit in a tower and watch for forest fires, occasionally patrol and make sure nobody is setting of fireworks or starting illegal campfires. It's lonely sometimes and a bit spooky in certain forests but really good for the mind.
