Am on Linux if that matters. With the fuckin governments trying to remove privacy and look through messages I am bailing from lots of stuff, and xmpp stuff seems decent.

Both support E2E with OMEMO or PGP (at least via plugins)
As you can imagine, I use PSI. I use it daily and parallel on my desktop(s) to "conversations" on my (android) smartphone, running my own xmpp server. The interface of PSI is highly customizable (unfortunately not entirely via the gui itself) and the E2E plugins are pretty solid.

If you consider using multiple installations on multiple devices (or even other compatible clients like conversations) I recommend to make sure the xmpp server you want to use is configured correctly, with the right modules (most important: the "bouncer" for showing/syncing messages on all clients, even if they disconnect individually from time to time)

Another potentially interesting alternative for you:

It's based on email protocols (imap/smtp, so that people with a mail account (wich is almost everyone) can use it. Notable restrictions: - limited to two devices by default (maybe there exist a workarround) - some email providers (e.g. google) may need some extra configuration to allow usage of this app. - (optional) live video/audio communication requires an additional external service (foss self host possible)
